Roasted Rosemary Sweet Potatoes
I've shared about some of the benefits of sweet potatoes with you so I wanted to share a recipe for you to try. Sweet Potatoes are full of nutrients! They are packed with Vitamin A, Vitamin C, B6 and Potassium. The sweet potato is a strong anti inflammitory and is well known for its hormone balance affects. They rank low on the glycemic index scale. Low glycemic index foods increase your blood sugar levels gradually, so your blood sugar remains more stable after your meal.
Ok so enough about the benefits. They also taste wonderful! Paired with rosemary it's a sweet and savory dish I'm sure you'll enjoy.
Ingredients:
2 Large Sweet Potatoes
1.5 TBSP of Olive Oil (Flavored oil would be delicious!)
2 - 3 TBSP of Fresh Rosemary, chopped
Salt and Pepper to taste
Directions:
Pre-heat oven to 400º.
If you prefer no skin peel potato and then cut sweet potatoes into bit size pieces. Put potatoes in a gallon size ziplop bag. Pour olive oil into bag. Massage potatoes around so that the oil is distributed evenly to all the potatoe pieces. Add rosemary to bag and again evenly distribute the rosemary.
Place on a baking sheet and sprinkle with salt and pepper.
Bake for about 20 minutes and then flip potatoes and bake for 15 to 20 more minutes or until tender.
